This is a superb organic cocoa mass which is simply obtained from toasted, hulled and ground cocoa beans, without the addition of other ingredients. Cocoa mass is also known as cocoa paste or cocoa liquor. We have this product supplied in drops for easy weighing and melting. Cocoa mass is ideal for adding an intense flavour of cocoa to creams and desserts, without any sugars.
Note that this cocoa mass is made from roasted or toasted cocoa beans. Cocoa and cacao mean the same thing. http://en.wikipedia.org/wiki/Cocoa_bean. A cocoa bean is a cacao bean whether roasted or not. Raw food marketers, unfortunately, promote the idea that cocoa is roasted and processed while cacao is raw when there is actually no difference. Although this is used as an ingredient in making chocolate, please note that this is cocoa mass, this product is not to be mistaken with chocolate.
