This is a superb organic cocoa/cacao liquor produced from Peruvian criollo beans. Cocoa liquor is also known as cocoa paste or cocoa mass. We have this product supplied in drops for easy weighing and melting. Criollo cocoa has a very intense flavour and when combined with cocoa butter and a sweetener of choice this will produce a wonderful single origin chocolate.
Note that this cocoa mass is made from roasted cocoa beans. Cocoa and cacao mean the same thing. A cocoa bean is a cacao bean whether roasted or not. Raw food marketers unfortunately promote the idea that cocoa is roasted and processed while cacao is raw when there is actually no difference. To avoid confusion we use cacao and cocoa when referring to our cocoa mass, whether they are roasted or not (raw).
Although this is used as an ingredient in making chocolate, please note that this is cocoa mass, this product is not to be mistaken with chocolate.
These 100% cocoa drops can also be enjoyed as they are for an intense bitter cocoa treat. We eat them with dates for a quick, improvised, sweetened criollo cocoa treat. For those wanting a pure cocoa product with no added sweeteners for baking or indeed making homemade chocolate this is perfect.
