To create the powder the fresh coconut meat is grated and expeller pressed to form a milk, which is then spray dried. The milk powder can be reconstituted in warm water or blended into liquids. Although you would expect all coconut milk powders to be dairy free, very few actually are. Unlike most other coconut milk powders that are currently offered, our coconut milk powders do not contain any sodium caseinate and are therefore dairy free. Vegans, those with dairy intolerances or perhaps those simply avoiding dairy due to a specific diet can enjoy this dairy-free alternative. It is packed with vitamins, electrolytes, and minerals like potassium and choline. What we’ve created is a very unique powdered milk that is 97% coconut milk with 65% coconut oil for maximum coconut oil goodness. The very small amount of tapioca maltodextrin and gum acacia are required to spray dry the milk and stop it clumping into very hard lumps. Fine desiccated coconut is often marketed as coconut milk but this does not fully dissolve which is why the extra ingredients are required.
Our 65% coconut milk powder is an extremely versatile powder and with the high oil content, it is a great way to gain the direct benefits of consuming coconut oil. Due to the coconut oil content, the powder does contain large lumps (especially in cold temperatures) and mixes best with warm or hot water….just stir well!
Coconut milk powder is also very practical too. No need to leave half-finished cans of regular coconut milk cluttering up the fridge, you can simply store the coconut milk powder at room temperature and by just adding a little water prepare it exactly when you need it and to the exact thickness you require (be it a light and runny milk or a thick rich cream). Customers also love it’s portability too, we’ve been told it’s a great lightweight companion for travel or camping when space is at a premium and a fridge unavailable.
There are so many ways to use our high oil coconut milk powder. It is a great breakfast cereal or porridge companion, makes great dairy-free ice cream, smoothies, chocolate and rich indulgent dairy-free chocolate truffles (using just two ingredients plus a little water)! Also great for savoury dishes in soups, curries or Thai cooking, just spoon into your warm liquid dishes and it dissolves into the milk. Although our standard coconut milk powder is our preference for lattes, other coffees and hot chocolate with it’s higher fat content it is a favourite for bulletproof coffees and when you want a more creamy hot chocolate or coconut drink. It is also a favourite for those following low carbohydrate diets.
